Lemon balm, or Melissa officinalis, is also known as bee leaf in Greek (Melissofyllo). Its leaves resemble those of peppermint but have a sweet lemony aroma and its flowers yield one of the best honeys. Traditionally used as a tea to lift the spirits and help fight depression, lemon balm is good for the body and the soul and is even believed to improve memory. Brewing time: 8'-10', 100C
