Honeypie (Melopita)

An easy dessert with pure Honey!

1kg Anthotyro cheese (or fresh ricotta)

1 cup honey (ideally Asfaka or Orange Tree or Thyme Honey)

1 cup sugar

1 tablespoon butter

2 tablespoons all-purpose flour Manna

6 eggs

1 teaspoon ground cinnamon



In a bowl, put the Anthotyro (or ricotta) cheese and mash with a fork.

Add the honey, sugar, eggs and work the mixture until all ingredients are homogenized and the mixture becomes fluffy.

Butter an ovenproof dish and sprinkle its base with some of the flour. Pour the mixture in the dish, lay evenly with a spatula and bake at 180C for about 30 minutes until golden brown.

When out of the oven let it cool for a while and then sprinkle with cinnamon. Served warm or cold, equally wonderful!
